Scott Wise says he has been talking with private equity groups "that could really put some money behind us." He says such partnerships could help the chain expand its reach as far as the West Coast.
Scotty’s announced plans Wednesday to open its first restaurant in Illinois. The Champaign-Urbana location will employ up to 100 people and open in the spring. The restaurant will be one mile away from the University of Illinois at Urbana-Champaign. The chain also recently announced plans for a Florida location, also set to open in the spring.
Wise says he believes, while Scotty’s may have nearly saturated the Indiana market, there is potential for new locations in cities including Terre Haute, Kokomo and Evansville. He says he’s also been in talks with brokers in Columbus, Ohio and Louisville.
