IU Student to Open Rush Bowls in Indiana

A Colorado-based fast-casual restaurant chain has announced plans to open its first three restaurants in Indiana. Rush Bowls, which features meals-in-a-bowl using fresh fruit, granola and honey, has signed an agreement with Ethan White, a junior at Indiana University.
Rush Bowls names White as an investor and operator, and says he is looking to locate the stores in Bloomington and Indianapolis. The first store is slated to open in mid-2018. White is financing the restaurants using investment profits and his personal savings, with help from a small group of outside investors.
"I have a passion for health and wellness, and I see Rush Bowls as an opportunity to bring value to my community by introducing a premium health product, served in a vibrant atmosphere, by an energetic team who understand the importance of excellent service," said White. "I especially look forward to meeting the needs of people with dietary restrictions. Being someone that deals with restrictions myself, I have always appreciated restaurants that go out of their way to provide customers with what they need."
Rush Bowls announced its first franchisee-owned location in Nashville last year. The company has nearly 50 restaurants in development throughout the U.S. with plans to open more than 20 of them by the end of this year.
