Indianapolis-based Sun King Brewing Co. plans to open a craft distillery and tap room in Carmel. The brewery says the facility is expected to open in the fall of 2017. The project’s total investment is expected to reach $5 million.
Located in Carmel’s new Midtown district, Sun King says the distillery and tap room will feature "unique flagship spirits," along with traditional products, including whiskey, gin and rum. The distillery will also offer seasonal spirits that will be available to customers at limited times.
Dave Colt, co-founder and head brewer at Sun King, will oversee distillery operations. He tells Inside INdiana Business the brewery has always thought about distilling since its infancy. "We thought if we were fortunate enough to have a vibrant business and we could extend that, what would we do? And distilling is a natural reaction to that because you’re halfway there with making beer so why not do the other half?"
Customers will be able to sample the spirits and try handcrafted cocktails. The distillery will also feature food from local restaurants and various Sun King beers on tap.
"The design of Sun King’s new distillery and tap room will accommodate approximately 300 patrons indoors or on the beautiful outdoor rooftop deck overlooking the Monon Trail and Midtown Plaza," said Justin Moffett with Carmel’s Old Town Development, which is partnering with Sun King to develop the location for the distillery. "The architecture will reflect the industrial history of Midtown as an important stop along the Monon Railway."
Colt says the goal of the distillery is "to continue to be creative and innovative and relevant for people in the great state of Indiana."
