InsideINdianaBusiness.com Report

Some Indiana caterers are utilizing technology that turns food waste to water. Bob Bedell, who is a partner at Green Smart Food Services which is licensed to market and sell the technology, says ORCA Green is a waste machine that utilizes micro-organisms. Joe Husar, owner of Kahn's Catering, says his business is using ORCA Green for the environmental benefits, as well as for the boost to the bottom line.

Bedell says there are currently 7,000 of the machines in use worldwide, with only 12 located in the United States.

Orca Green, which stands for organic refuse conversion alternative and looks like a stainless steel dishwasher, breaks down food into a liquid form so it can be disposed of easier with being hauled to a dumpster and landfill.
